Easy Refrigerator Pickles Using Vinegar.
You will need:
1 Quart Mason Jar & Lid
Add to the jar:
2 Garlic Cloves, Halved
1 tsp. Black Peppercorns
1 tsp. Mustard Seeds
1 tsp. Dill Seeds
Then add:
1-2 Zucchini, cleaned & sliced
Boil and dissolve:
1 1/2 Cup Water
1/2 Cup Distilled White Vinegar
2Tbsp. Sugar
2 Tbsp. Sea or Kosher Salt
Method:
Add the brine to the jars of zucchini and spices, fill to just below the rim. Then, let them cool to room temp. Next, shake them up to disperse the spices and refrigerate for at least 24 hours. They will get better over the next few days!
If you would like a spicy pickle, you can add some fresh sliced banana peppers, jalapeno, serrano, etc. If you like a super garlicky pickle - add another clove! Also, if you have too much brine - that's ok. It's better to have more than less. You can toss it or save it to add to your next batch of homemade pickled items.
