With chickpeas, rice, yogurt and cilantro.
Ingredients:
1/4 Onion, diced
1 Jalapeno, minced
2" Ginger, minced
3 Garlic Cloves, minced
3 Tbsp. Tomato Paste
2 Tbsp. Tikka Masala
16 oz. Diced Tomato
1 Cup Coconut Milk
30 Oz. Chickpeas, cooked
Salt, to taste
1 Cup Rice, (dry measure) cooked
1/2 Cup Yogurt
1/2 Lime, juiced
1/2 Cup Cilantro Leaves
16 Corn Tortillas, warmed
Method:
Sauté onions in a large pan with a little oil till tender over medium heat. Add jalapeno, ginger and garlic and cook a minute. Next, add the tomato paste and tikka masala and cook another minute or two. Then, add the diced tomato, coconut milk and chickpeas. Simmer until the sauce thickens, stir occasionally. Salt to taste.
Mix the yogurt and the lime before serving. Enjoy!
