With garbanzo beans & pepperoncinis.
Ingredients:
Garbanzo beans / Chickpeas
Carrot, julienne
Cherry Tomatoes
Cucumber, diced
Kalamata Olives
Pepperoncinis, sliced
Lettuce of choice, chopped
Fresh Cracked Pepper
Italian Dressing:
1/2 Cup Olive Oil
1/4 Cup Red Wine Vinegar
1 Tbsp. White Vinegar
1/2 Lemon, juice only
3 Tbsp. Nutritional Yeast or Parm
1 1/2 tsp. Dried Oregano
3/4 tsp. Salt
3/4 tsp. Granulated Garlic
1/2 tsp. Dijon Mustard
1/4 tsp. Red Pepper Flakes
Make dressing ahead of time for best results. Place all ingredients into a mason jar and shake vigorously. Spoon over salad. Enjoy!
