With bean sprouts, mushrooms and cashews.
Ingredients:
1 lb. Green Beans, cleaned
1/2 Onion, diced
1 lb. Mushrooms, sliced
12 Oz. Bean Sprouts
1 Tbsp. Thyme, chopped
2 Garlic Cloves, minced
1 Cup Cashews
2 Cups Vegetable Stock
Salt & Pepper, to taste
1 Cup Fried Onions
Method:
Cut green beans in half or thirds, depending on how long they are. Boil them for about 5 minutes. Remove and set aside.
Blend cashews with a little stock in a high speed blender until smooth, set aside.
Meanwhile, sauté onions, mushrooms and thyme with a little salt in a large pan to get some caramelization. Add bean sprouts and wilt down a bit. Add garlic and cook while stirring for another minute. Add green beans, stock and cashew cream. Bring to a boil, turn off the heat, season with salt and pepper to taste. Add to a casserole dish and bake for 30 minutes at 350 degrees. Sprinkle on the fried onions in the last 10 minutes. Enjoy!
